Thursdays Are For Food

I love food! I love cooking!! I love the food network!! I just love it all!! It has been fun to see the way my tastes have changed, and still continue to change, as I get older.  For example, I used to hate a lot of veggies, among them are red peppers, asparagus, and artichokes.  Now I love them!! I am REALLY trying to get myself to like tomatoes, slowly but surely it's getting better.  I still don't like mushrooms and I super HATE zucchini, I may like it one day, but I'm not going to push too hard on that one...

So I thought that each week I would share my love food with you!! Most posts will probably include a recipe!

Since I'm sticking with my fall theme I thought about all the things that remind me of fall. Pumpkin, cinnamon, and spices!!

I love pumpkin cookies and pumpkin bread, and pumpkin pie is always a big hit no matter where you are (thought not particularly loved by me, I know, I'm weird)!!

I found this recipe on Food Network today and I had to share.  I haven't tried it yet, I know, I really should have before posting it, but I definitely plan on using it!! It sounds so interesting!! I can't wait!



Penne-Wise Pumpkin Pasta


Ingredients

  • Salt
  • 1 pound whole-wheat penne
  • 2 tablespoons extra-virgin olive oil
  • 3 shallots, finely chopped
  • 3 to 4 cloves garlic, grated
  • 2 cups chicken stock
  • 1 (15-ounce) can pumpkin puree
  • 1/2 cup cream
  • 1 teaspoon hot sauce, to taste
  • Freshly grated nutmeg, to taste
  • 2 pinches ground cinnamon
  • Salt and black pepper
  • 7 to 8 leaves fresh sage, thinly sliced plus more, for garnish
  • Grated Parmigiano-Reggiano

Directions

Heat water for pasta, salt it and cook penne to al dente.
Heat the oil, 2 turns of the pan, over medium heat. Add shallots and garlic to the pan, saute 3 minutes. Stir in chicken stock and combine with pumpkin, stir in cream then season sauce with hot sauce, nutmeg, cinnamon, salt and pepper. Reduce heat to medium low and simmer 5 to 6 minutes more to thicken. Stir in sage, toss with pasta with grated cheese, to taste.

I am thinking that I might pop it in the oven for a few minutes to give it a nice crispiness on top! Let me know if you try it! I'll definitely let you know when I do!! 


p.s. Don't forget that pumpkin is not in season yet, like I did! Haha!
